Olympus Halloumi Cheese is a semi-hard, unripened, brined cheese traditionally made in Cyprus. Olympus, an Australian company, produces their halloumi using a traditional Cypriot method with pasteurized fresh cow's milk, non-animal rennet, and starter culture. Mint is often hand-sprinkled on the cheese before it's folded and placed in a light brine.
